I'm a social drinker, so when I'm at home and want something refreshing, a mocktail it is!

This homemade Grapefruit Rosemary Soda is absolutely heavenly! It's a great cold beverage for a hot summer day or a non alcoholic drink for the holidays, like Thanksgiving, Christmas or New Years Eve.

You can make it as sweet as you want by adding more or less simple syrup than instructed. The grapefruit and rosemary are a great flavor combo. It's a great drink for kids too, since it's alcohol free!

Recipe tips and substitution ideas:


  • Try using fresh basil or mint instead of rosemary in this recipe. Orange juice instead of grapefruit is delicious too.
  • You'll have rosemary simple syrup for more than two sodas. Refrigerate leftovers in an airtight container (I use mason jars) for up to one week.
  • Make this into an adult beverage by adding sparkling wine or champagne instead of the sparkling water.

Grapefruit Rosemary Soda

Ingredients

  • syrup:
  • 3/4 cup granulated sugar
  • 1 cup of water
  • 2 sprigs of fresh rosemary
  • soda:
  • 1/4 cup rosemary syrup
  • 2 cups of grapefruit juice
  • 1 lime, cut in half
  • 2 cups plain sparkling water or club soda
  • ice
  • grapefruit slices, lime slices or rosemary sprigs for garnish, optional

Instructions

  1. Syrup:
  2. In a small saucepan, combine the sugar, water and rosemary. Heat over medium heat, stirring until the sugar is dissolved. Remove from heat.
  3. Allow the syrup to cool completely with the rosemary sprigs still in it to infuse more flavor. Once cooled, remove the rosemary sprigs.
  4. Soda:
  5. Fill two glasses with ice.
  6. Add about 2 tablespoons of the rosemary syrup to each glass (adjust to taste based on sweetness preference).
  7. Pour in 1 cup of grapefruit juice into each glass.
  8. Squeeze the juice of half a lime into each glass.
  9. Top off each glass with one cup of sparkling water or club soda. Stir gently to combine.
  10. Garnish with a slice of grapefruit or lime and a sprig of rosemary in each glass, if desired. Serve immediately!
