If you are looking for a refreshing and summery potato side dish, you are at the right place! This is a recipe I made when I first started blogging, and it is so good, I felt it needed to be shared again with an updated photo!
I just love the freshness of the lemon and the flavor of the dill weed. It is so easy to make and the results are fabulous! You can bake them in the oven, or also in a foil pack on the grill. I am a huge potato lover and the flavors in this recipe compliment the baby red potatoes so well. I have to thank my sister Shannon for taking the wonderful picture in this post. Roasted Lemon and Dill Potatoes (print recipe)
What you need:
1 pound baby red potatoes, washed and quartered
1 lemon, thinly sliced
1 tablespoon olive oil
1/2 teaspoon dried dill weed
salt and pepper, to taste
Directions:
Preheat oven to 400 degrees. On a rimmed baking sheet, toss potatoes, lemon, olive oil, dill weed and salt and pepper. Bake for 45 minutes to 1 hour or until potatoes are browned and tender stirring a few times during baking.

Deletethose look really good. it's my husband favorite dish but I always roast it with carrots tossing a few grape tomatoes at the end! you should try it!
