Salmon and Pasta with Lemon Dill Sauce Recipe

Ingredients (3-4 servings)
- 1/2 pound bow tie pasta
- 8 ounces salmon fillets, thawed (seasoned with salt, pepper and dill weed)
- olive oil
- 3 cloves garlic, minced
- 1/4 cup onion, finely diced
- 1/3 cup chicken broth
- 1/4 cup white wine
- 1/2 teaspoon dill weed
- juice from one lemon (about 2-3 tablespoons)
- 1/2 teaspoon lemon zest
- 1/2 cup cream
- 2 tablespoons fresh parsley, minced
- salt and pepper as desired
Instructions
Preheat oven to 375 degrees. Place seasoned salmon in a greased glass baking dish. Bake for 15-20 minutes, or until fish flakes easily. Flake fish into bite sized pieces. Cook pasta according to package directions. Rinse and set aside.
Meanwhile in a large skillet, heat some olive oil over medium heat. Saute garlic and onion for about 5 minutes, or until tender. Add broth, wine, dill weed, salt, pepper, lemon juice and zest. Bring to a boil, reduce heat and simmer for about 5 minutes. Add cream and parsley, simmer for about 3 more minutes. Add pasta and salmon, and toss to coat. remove from heat and serve.

ReplyDeleteYou mention white wine in the recipe....would you please advise specifically which white wine you used or what others you may also suggest....yes, to save you a little time and typing i do realize that one should use regular wines and not the ones in the market that are listed as cooking wine and have massive amounts of salt...also, i don't drink wine, so i have no favorite one that i would think to use in the recipe... thank you in advance.

DeleteIDK if you ever figured out your wine question or not. I never use "cooking wine." I would think that any dry white wine would do. As a personal preference, I would cook with cheap wine and drink "the good stuff." Since you're not a wine drinker, I would recommend buying those little 4-pack bottles. I believe one brand is Barefoot. However, the brand doesn't matter. This way you'd always have wine on hand to cook with and you don't waste a full bottle...since you should only have it open for a couple days. This works great if you're looking for a red (like merlot) to cook with as well. Hope this helps you or anyone else. I'm making this recipe this week.

ReplyDeleteHi! I'm not familiar with country cream, but at my local grocery store I buy heavy cream or whipping cream and use it in this recipe. Shrimp would be delicious instead of salmon. Thanks for stopping by!
