I hope everyone is having a great weekend so far!
We are expecting snow in Minnesota tonight and tomorrow, so Ella and I will be at home trying out some new recipes after we go see Santa later today!
We tend to hibernate at home a lot during the winter, so it's always a perfect time to try some new recipes.
Ella just loves to help whenever possible and I love that I can teach her new traditions, especially around the holidays.
There's nothing like cooking and baking when it's cold outside. Comfort foods are SO much better in the wintertime than summer.
This cranberry salad is such a beautiful dessert and is so perfect for any holiday meal or party! I brought it to Thanksgiving at my Mom's house and we all really liked it.
I made it again and brought it for all my co-workers to try, and they all loved it too and requested the recipe to make at their next holiday party.
It's easy to make, but make sure to allow the time of prepping the fruit part of the salad the evening before serving.
I just love anything with cranberries. The tartness is absolutely delicious to me and you can use them in SO many different types of recipes whether sweet or savory.
This recipe is especially good with the cream and the fruit mixed together. I love raspberry, so I used raspberry jello, but you can use pretty much any red jello for this recipe.

This recipe is just too easy to make
- Bring the water to a boil, stir in jello and cool
- Process cranberries in a processor.
- In a bowl, pour cranberries over sugar, stir
- Stir cooled jello in the cranberries and add pineapple, juice, apple and pecans
- Mix, cover and refrigerate overnight
- Whip the cream and beat in the cream cheese
- In a glass serving dish, layer the cranberries and cream
- Cover and refrigerate

Creamy Cranberry Salad
Yield: 8 servings
ingredients:
- 3/4 cup water
- 1- 6 ounce package red jello (I used raspberry)
- 1- 12 ounce bag fresh cranberries
- 1 cup sugar
- 1- 8 ounce can crushed pineapple, drained
- 3/4 cup orange juice
- 1 apple with peel, grated
- 1 cup pecans, chopped
- 2 cups whipping cream
- 1- 8 ounce package cream cheese, softened
instructions:
- Bring the water to a boil in a medium saucepan. Stir in jello and cool.
- Process cranberries in a food processor or blender. In a bowl, pour cranberries over sugar. Stir to dissolve.
- Stir cooled jello in the cranberries and add pineapple, juice, apple and pecans. Mix well, cover and refrigerate overnight.
- In a bowl, whip the cream with a mixer, then beat in the cream cheese.
- In a glass serving dish, layer half the cranberries, the whipped cream and then the remaining cranberries.
- Cover and refrigerate until serving.
