I'm back with the next wild rice recipe!! This one turned out to be one of my favorites. I'm not a huge fan of pancakes, but these wild rice pancakes definitely hit the spot! 

I enjoyed them warm with butter and syrup, and also cold and plain for a snack. The nutty, slightly chewy texture of the wild rice adds something special, making these pancakes extra hearty and satisfying.  

Made with locally grown Minnesota wild rice, these pancakes bring a unique twist to a classic breakfast favorite. The wild rice adds depth of flavor and a wholesome, rustic feel that pairs perfectly with maple syrup, rhubarb syrup, fresh berries, or even a dollop of whipped butter. 

Whether you're serving them up for a cozy weekend brunch or making a batch to enjoy throughout the week, these wild rice pancakes are a delicious way to highlight one of Minnesota’s most treasured ingredients!

Recipe tips and substitution ideas:


  • These pancakes can be refrigerated in an airtight container for up to three days. They can also be frozen for up to two months. Once cooled, freeze in a freezer bag or airtight container with layers of parchment paper in between. Reheat from the refrigerator or from frozen in the toaster or microwave.
  • If you don't want to make homemade batter, just add wild rice to your favorite boxed mix.
  • You can cook your own wild rice for this recipe, or use store bought cooked wild rice.

Minnesota Wild Rice Pancakes

Ingredients

  • 3/4 cup milk
  • 1 large egg
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/2 cup cooked wild rice

Instructions

  1. In a medium bowl, whisk together the milk, egg, oil and vanilla until combined.
  2. In a separate bowl, whisk flour, sugar, baking powder, baking soda and salt until combined.
  3. Add the wet mixture to the dry, gently whisk until the batter is just combined. Fold in cooked wild rice until just combined.
  4. Preheat a lightly greased griddle or frying pan over medium heat.
  5. Pour 1/4 cup batter onto the heated surface for each pancake. Cook for about 2 minutes, or until bubbles start to form, then flip, and cook for an additional 1-2 minutes, until golden brown.
  6. Transfer to a platter, then repeat with remaining batter, if needed.
