Fall is arriving here in Minnesota, and that always means it's time to make a huge pot of chili! The cooler weather makes me crave soups, stews and chili! I started making chili with ground turkey or chicken a couple years ago and just love how it turns out! You can always substitute ground beef if you wish, it's just a bit on the healthier side with chicken. I normally make my chili with butter beans since I absolutely love them, but the grocery store I stopped at didn't carry them, so I went without! This chili comes together fairly quick, and is always great leftover! Make sure you sprinkle tons of cheese on top when serving! It's not the same without it! :)
Ground Chicken Four Bean Chili (click here to print recipe)
What you need:
1 tablespoon bacon grease (optional, I like the smoky flavor it adds, or use olive oil)
1 pound ground chicken
3/4 cup onion
4 cloves garlic
1 cup bell pepper, diced
5 1/2 cups tomato juice
1- 14.5 ounce can southwest style diced tomatoes
1- 15.5 ounce can great northern beans
1- 15.5 ounce can dark red kidney beans
1- 15 ounce can chili beans
1- 15 ounce can black beans
2 teaspoons oregano
2 tablespoons chili powder
1 1/2 tablespoons cumin
salt and pepper
shredded cheddar and pepper jack cheese
Directions:
In a soup pot, melt the bacon grease over medium high heat. Add the chicken, onion, garlic, bell pepper. Brown until chicken is cooked through. Season with salt and pepper, as needed.
Rinse and drain the beans. Add the tomato juice, beans, oregano, chili powder and cumin to the soup pot. Stir and reduce heat to medium- medium low. Simmer for 30 minutes, stirring frequently. Serve with shredded cheddar and pepper jack cheese sprinkled on top.
