We had a fun and relaxing weekend, which was much needed!
Today's recipe is another one that takes advantage of the yummy awesomeness of fall apple cider! Have you ever used it to make gravy??

It has a slight sweetness, but not too much to overpower the dish.

Pan Fried Chicken Tenderloins with Apple Cider Gravy

Ingredients (3 servings)
- 1 tablespoon butter
- 1 tablespoon olive oil
- 3 chicken breasts, flattened or 6 chicken breast tenderloins
- 3/4 cup chicken broth
- 3/4 cup fresh apple cider
- 1/2 tablespoon dried parsley
- 1 clove garlic, smashed
- salt and pepper
- cornstarch and water slurry, to thicken
- Garlic Mashed Potatoes
Instructions
Season the chicken breasts with salt and pepper.
In a large skillet, heat butter and olive oil over medium high heat.
Add the chicken breasts, and brown on each side for about 4-5 minutes, or until cooked through. Remove chicken from the skillet and set aside.
Add the broth, apple cider, parsley, and garlic to the skillet. Bring to a boil, and scrape the browned bits off the bottom of the skillet. Stir in cornstarch slurry, reduce heat to medium and cook until thickened. Season with salt and pepper, as needed. Add chicken back to the skillet and remove from heat. Serve over mashed potatoes or rice.
