Happy New Year!
2013 was a fantastic year for our family and I cannot wait to see what 2014 brings!
I just want to thank each and every one of you for subscribing, following on FB, Pinterest, Blog Lovin etc.
This blog is my passion and I love sharing and interacting with my readers. You guys rock! I hope all of you have a wonderful 2014!
I spent the day unpacking today! I am down to 10-ish boxes left and I couldn't be happier to be almost settled in.
This extra day off was productive and with it being SO cold outside we didn't want to leave the house anyway.
We're having an easy dinner of BLT's and french fries tonight and Netflix later with my daughter! We're trying to finish Switched at Birth before the new seasons starts this month!
Today's recipe is for a Ground Beef Taco Pie! Can we say yum??
This recipe is very easy to make when using a frozen pie crust. Homemade would be better, but I'm not much of a crust maker and this makes it quick for weeknight meals!
Top it with all of your favorites when it comes out of the oven... tomatoes, lettuce, guacamole, salsa and make it a meal! Enjoy!

Ground Beef Taco Pie
What you need:
1 frozen pie crust (9 inch)
3/4 pound lean ground beef
1/4 cup onion, diced
2 cloves garlic, minced
1/3 cup bell pepper, diced
1/2 teaspoon oregano
1 1/2 teaspoons chili powder
2 teaspoons cumin
1/2 cup black beans, rinsed and drained
3/4 cup shredded cheddar cheese
salt and pepper, as desired
Directions:
Bake the pie crust according to package directions.
In a large skillet, brown the ground beef, onion, garlic, bell pepper. Season with oregano, chili powder, cumin, salt and pepper. Once beef is cooked through, stir in the black beans.
Pour meat mixture in the baked pie crust. Sprinkle with cheddar. Bake at 350 degrees for 10 minutes, or until cheese is browned. Add your favorite taco toppings, cut and serve!
It's been cold and windy here and I stayed in today, too. I only wish I had this pie for lunch or dinner. It looks awesome! And yes...most definitely 'yum' to this one! : )

DeleteYum...that pie looks delicious!! It is freezing cold here as well, so I will have to give this recipe a try....so I can turn the oven on and heat up the house. ;)
