Want to eat healthy and not break the bank? Try these air fryer rosemary honey roasted carrots. They make the tastiest side dish or meatless meal.

These air fryer glazed carrots make the perfect affordable, vegetarian friendly, healthy dish. The combination of honey, fresh rosemary and carrots lead to a burst of nutrients. Antioxidants, iron, zinc, fiber, and potassium just to name a few. Helping your immune system and blood flow.

It is true that cooking fresh herbs and vegetables can decrease the nutritional value, but as your loyal air fryer advocate, the comparison shows that roasted carrots in the air fryer lose less nutrients than ovens.

This dish is healthy, affordable, quick, and tasty. Air fried roasted carrots with rosemary and honey will leave vou with an incomparable texture of crunch on the outside and softness on the inside. It definitely beats eating an apple every day.

These carrots are so great served with this Roast Venison! I'm not a hunter myself, but love when friends or family share their venison with us!

Air Fryer Rosemary Honey Carrots

Ingredients

  • 1 pound regular carrots
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 stalks of fresh rosemary
  • 1/4 - 1/2 teaspoon salt, or salt to taste
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat air fryer to 375 degrees F according to manufacturer instructions. (usually it's 4-5 minutes)
  2. Wash and dry the carrots. Trim the ends (most of the very thin part should be cut off as it will simply get charred very quickly and burn), and cut the carrots lengthwise into half (medium ones) and into fours larger ones. Mine came up to about 4 inches long and ¾ inch thick strips.
  3. In a larger bowl toss the carrots in honey, oil, rosemary, salt, pepper.
  4. Once the air fryer is preheated, coat the basket lightly with oil or use air fryer basket liners. Transfer the carrots into the basket and air fry for 12-15 minutes, shaking the basket halfway through to ensure even frying.
  5. You’ll need to do this in 2-3 batches depending on the size of your air fryer. It took me 2 batches with a Cosori 5.8 quart.
  6. The carrots should be crispy, lightly golden brown and cooked through. Enjoy as is or with dipping sauces.

Notes

Additional rosemary stalks can be added to the air fryer when frying, or as a garnish.

Store leftovers in an airtight container in the refrigerator for up to three days.

Leftovers are best reheated in a preheated air fryer at 375 degrees F for 3-5 minutes.
