I have a confession. I'm pretty new to eating curry. It's definitely not something we grew up with in our central Minnesota hotdish and German food eating family! My younger sister, Shantel studied abroad last summer. Her first stop was Croatia, then she stopped in London to visit an online friend of hers. While she was traveling, she tried a curry really similar to this, then came home and made it for me shortly after.
We totally cheat and use Trader Joe's curry sauce, but you can definitely make yours from scratch, if you wish. Trader Joe's has some pretty delicious jarred sauce and when you doctor it up with garlic, tomatoes, sweet potatoes and chicken, it turns out to be a quick and fabulous tasting meal!
If you're kiddos are adventurous and like food with a touch of spiciness, then this would be a great meal for the family. However, my daughter is one of the pickiest eaters ever, so I served her the rice with some veggies, while feasted on the curry goodness.

Chicken, Tomato and Sweet Potato Curry

Ingredients (4 servings)
- 1 medium sweet potato, diced into larger bite sized pieces
- 1 tablespoon olive oil
- 1 pound chicken breast, cut into bite sized pieces
- 3 cloves garlic, minced
- 6 campari tomatoes, quartered
- 1- 15 ounce jar curry sauce (I used Trader Joe's)
- salt and pepper, as needed
- cooked white rice
Instructions
Boil sweet potatoes until tender. Drain.
Meanwhile, heat olive oil over medium high heat. Add chicken breast and cook for 4-5 minutes. Add garlic and tomatoes, saute for another 1-2 minutes. Reduce heat and add curry sauce. Simmer for 10 minutes. Stir in the cooked sweet potatoes and season with salt and pepper if needed.
Serve over cooked white rice.
