Ground Chicken Enchilada Skillet

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1/2 cup bell pepper, diced
  • 1 pound ground chicken
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon crushed red pepper
  • 3 cloves garlic, minced
  • 1 - 15 ounce can black beans, rinsed and drained
  • 1 - 10 ounce can red enchilada sauce
  • 5 corn tortillas, halved and sliced into thin strips
  • 1 cup shredded cheddar cheese
  • cilantro, diced tomatoes, diced red onion and shredded cheese for garnish, optional

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion and bell pepper, saute for about 5 minutes.
  3. Increase the heat to medium high, then add the ground chicken, seasoned salt, crushed red pepper and garlic. Cook and crumble the ground chicken until no longer pink.
  4. Reduce the heat to low, add the black beans and enchilada sauce. Stir well, then cover and simmer for 10 minutes.
  5. Add the tortilla strips. stir well, top with cheese then cover and simmer for another 5-10 minutes or until cheese is melted.
  6. Serve and garnish, if desired.
