This recipe is absolutely amazing. It's been a family favorite for quite a few years.
One of our local Italian restaurants, Ciatti's, here in Saint Cloud, MN, served this dish.
They were closed down for a couple years, re-opened and then closed again. We missed our favorite pasta, so we did some experimenting, and came up with this copycat.
This copycat recipe is darn near spot on, and because it's made at home, I really love it SO much better than the original at the restaurant.
When I have fresh basil and tomatoes in the summer, I make it at least weekly and during the winter, I usually buy my veggies and herbs at Fresh Thyme since they seem to be the best in the area.
It turns out perfect every time! It's also great topped with grilled chicken breast, or grilled shrimp.
If you're from central Minnesota and miss this restaurant, make sure to try this pasta!

What is in Capellini al Fresco?
- Extra virgin olive oil
- Garlic
- Fresh Basil
- Fresh tomatoes
- Salt
- Black Pepper
- Homemade Canned Tomato Salsa
- Ground Beef and Vegetables w/ Garlic Seasoned Tomatoes
- Ranch Vermicelli Pasta Salad
- Roasted Tomatoes with Cilantro
- Tomato Garlic Vinaigrette
- Savory Tomato Pie
You can add or substitute with the following ingredients:
- diced red onion
- diced bell pepper
- garlic olive oil
- chopped fresh kale
- heavy cream
- balsamic vinegar
- shallots
- truffle salt
- chopped fresh spinach
- Lemon Lime Basil Margarita
- Roasted Tomato, Basil and Garlic Noodle Soup
- Orange Basil Cream Sauce
- Blueberry Basil Balsamic Mozzarella Crisps
- Basil Chicken Macaroni Salad
- Blueberry Basil Lemonade

Capellini al Fresco
Yield: 4 servings
Ingredients:
- 10 Campari tomatoes, quartered (can also use roma or grape)
- 8 ounces capellini or angel hair noodles
- 3 tablespoons olive oil, divided
- 6 garlic cloves, minced
- 1- .75 oz package fresh basil, chopped
- salt and pepper (measurements listed in instructions)
- shredded parmesan cheese, for topping
Instructions:
- Quarter the tomatoes and place them in a bowl. Add 1-2 teaspoons of salt over top and cover with water. Soak for 30 minutes and drain well prior to using.
- Cook pasta according to package directions. Rinse and drain. Do not overcook.
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add garlic and saute for 2-3 minutes.
- Add the drained tomatoes, 2 tablespoons olive oil, 1 teaspoon salt and 1/2 teaspoon pepper, cook for 5 minutes.
- Add the basil, cook for another 1-2 minutes.
- Stir in the cooked pasta, toss to coat. Add additional salt if needed.
- Serve topped with parmesan cheese.
