Turkey and Swiss Sandwich with Cranberry Mayo
Sandwiches are great for any meal, breakfast lunch or dinner! We have them often at our house, especially when it's busy and I don't have alot of time to spend in the kitchen.
This sandwich is especially good. Use your leftover Thanksgiving turkey and cranberry sauce for a delicious and unique bite to eat.
One of the best things about holidays is all the leftovers! I just love creating new recipes using leftovers and seeing what I can come up with. The results are all usually wonderful and they go into the recipe file for next year!
I made these sandwiches recently for my sister and cousin at a lunch date and they were a huge hit! The same day there was a crew at my house installing solar panels, so we made extra and served lunch to them too!
I initially wanted to sere this sandwich on a croissant, but the grocery store was out the day I went shopping. It would be great on pretty much any type of bread or wrap.
You can also use any type of cheese or fresh leafy greens instead of the swiss and spinach.
This would be great served for lunch or cut into halves and served on a platter for any game day party!

Turkey and Swiss Sandwich with Cranberry Mayo
ingredients:
- Cranberry Mayo:
- 1/4 cup mayo
- 2 tablespoons whole berry cranberry sauce
- 1/8 teaspoon black pepper
- Sandwiches:
- cranberry mayo
- fresh spinach leaves
- deli turkey or leftover sliced turkey breast
- sliced swiss cheese
- mini sub buns, or bread of your choice
instructions:
- Combine mayo ingredients in a small bowl.
- Spread cranberry mayo on each side of sub bun. Layer spinach, turkey and swiss cheese on the sandwich and serve.
