This recipe was photographed and updated 7/2023.
I first served this salad for my oldest daughters 5th birthday party and it was such a hit with everyone. The bowl was completely empty by the end of the party.
Since then, I've made many different variations and it always turns out delicious.
The combo of the mild cucumbers, sweet strawberries and savory tomatoes, along with my homemade garlic balsamic vinaigrette is such a wonderful flavor combo. You can also use store bought balsamic vinaigrette, or your own favorite recipe in this simple salad.
This salad is best served fresh, but leftovers can be refrigerated if you use them within a couple days. It's great as a side dish, or a meatless lunch.
