Hamburger soup was a childhood favorite of mine! My mom always made the best. We always had tons of garden fresh vegetables and canned tomatoes from the garden, but my quick and easy version I'm sharing today, still has that same comfort in a bowl.
Start off with lean ground beef and onion, then add the veggies, liquids and seasonings! So simple and my kids absolutely love it!
It's a fantastic option for a work or school lunch! Simply pack it in a thermos, and it's good to go. When my oldest daughter was in elementary school, she frequently enjoyed soups for lunch. Preparing a couple of different soups over the weekend ensures you have delicious, budget-friendly lunches ready for the entire week. So simple and convenient! Switch up the vegetables, meat, pasta or seasonings for something different every time you make it.

Recipe tips and substitution ideas:
- If you prefer, cook the pasta separately and add to your bowl when serving.
- Refrigerate for up to five days in an airtight container.
- This recipe is great with any small pasta, any flavor broth and any ground meat.
- We also use fresh basil, parsley or rosemary instead of Italian seasoning.
- Try using any fresh or frozen vegetables you have, add cabbage or cauliflower instead of pasta or substitute tomato juice instead of water.

Hamburger Vegetable Noodle Soup
Ingredients
- 1 pound lean ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper
- 1 - 15 ounce can diced tomatoes
- 1 - 12 ounce bag frozen mixed vegetables
- 1 - 32 ounce carton beef broth
- 2 cups water
- 1 cup ditalini pasta
Instructions
- In a large stock pot or dutch oven over medium-high heat, brown the ground beef with the onion, garlic, Italian seasoning, seasoned salt, black pepper and crushed red pepper, crumbling as it cooks, until the beef is no longer pink. Remove grease if needed.
- Add the remaining ingredients EXCEPT the pasta. Bring to a boil and reduce heat to medium-low and simmer for 10 minutes.
- Stir in the pasta and cook until the pasta is al dente. Remove from heat and serve.

DeleteIf you want a thicker soup and a little cheaper. Use 8 cups of water, 6-8 beef bouillon cubes. After browing/draining hamburger (2 lbs), add 1-2 sticks of butter(melt), 1 cup of flour (stir). 2 cups of water (stir and bubble for 1 min), add bouillon and all other ingredients (double or adjust to your taste). This can sit on the stove all day, and freezes.
