When it comes to comfort food, this recipe hits the mark. Meat and potatoes, casseroles, pastas, and soups are some of my favorite go-to meals.
This Hamburger and Mushroom Gravy is a budget-friendly, family-approved dish that my mom and grandma used to make. They didn’t add mushrooms to theirs, but they’re a must-have in my version. The gravy, made with corn starch, is rich and velvety, tying the whole dish together beautifully.
Made with simple ingredients you likely already have on hand, this dish is quick, easy, and perfect for weeknights. Plus, the leftovers reheat beautifully for a fast and delicious lunch.

Recipe tips and substitution ideas:
- Refrigerate the leftovers in an airtight container for up to three days. Reheat in the microwave or a skillet on the stove.
- If you prefer your gravy thicker or thinner, adjust the amount of cornstarch you add to your water.
- Different broths can have various amounts of sodium. We use less seasoned salt to start off with, then add more at the end of cooking if needed. Try adding crushed red pepper for some heat.
- Try adding some other fresh herbs instead of parsley. Use sliced fresh white mushrooms or baby bellas. Diced jalapeno or bell pepper is also a good addition.
- Ground turkey or chicken works great instead of ground beef. For a tangy flavor, add some balsamic vinegar. For a creamy gravy, add some heavy cream or sour cream.

Hamburger and Mushroom Gravy
Ingredients
- 1 pound lean ground beef
- 3 cloves minced garlic
- 1 medium finely diced onion
- 1/2 teaspoon seasoned salt
- 1/2 teaspoon black pepper
- 2 cups fresh sliced mushrooms
- 1 3/4 cups beef broth
- 1 1/2 tablespoons corn starch
- 1/4 cup room temp water
- 2 tablespoons fresh parsley, chopped
- mashed potatoes, cooked rice, cooked egg noodles or baked potatoes, for serving
Instructions
- In a large skillet over medium high heat, add the ground beef, garlic, onion, seasoned salt and black pepper. Cook and crumble the ground beef until browned. Drain grease, if needed.
- Add the mushrooms, saute for 4-5 minutes, then add the beef broth. Bring to a boil.
- In a bowl, combine the corn starch and water, then add to boiling broth. Reduce heat to medium, then simmer for a couple minutes until the sauce starts to thicken into gravy, stirring often.
- Stir in the parsley and remove from heat.
- Serve over mashed potatoes, cooked rice, cooked egg noodles or baked potatoes.
