This cold corn dip is such a crowd pleaser and super addicting. It's great served with tortilla chips or Fritos and affordable to make as well.
You can make this dip spicy or mild, depending on how you prep your jalapenos. It's tangy, creamy and full of different flavors and textures. Each bite is absolutely wonderful and it's guaranteed to disappear fast at any party or celebration.

Recipe tips and substitution ideas:
- Refrigerate leftovers in an airtight container for up to two days.
- Use shredded cheddar or cotija cheese instead of Mexican blend. Diced red onion is great instead of green. Also, bell pepper or Anaheim peppers are a great substitute for jalapeno.
- I removed the ribs and seeds of my jalapeno to make it mind. If you prefer some heat, add them in.
- I recommend freshly shredded cheese for the best flavor and texture.

Bacon Corn Dip
Ingredients
- 2 - 15 ounce cans whole kernel corn, drained
- 4 slices of bacon, cooked and chopped
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup Mexican blend shredded cheese
- 3 green onions, sliced
- 1 jalapeno pepper (ribs and seeds removed), finely diced
- ½ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
Instructions
- Add all the ingredients to a medium sized bowl. Stir gently to combine.
- Cover and refrigerate until serving.
- Garnish with additional green onion or bacon, optional. Serve with tortilla chips.
