Some of my favorite meals are meatless. They are a huge money saver, plus they're generally quicker to prepare, making them great weeknight meals. If you've been following me for awhile, you know that I'm a pasta lover, and am always looking to try new pasta recipes.
I received a care package from a friend recently with some ingredients for easy meals. In the package, there was a jar of alfredo sauce, so I decided to create this recipe. I normally make alfredo homemade, which can't be beat, so I knew I'd want to add some things to the store bought alfredo.
The recipe turned out delicious. The addition of tomatoes, mushrooms and basil jazz up the jarred alfredo sauce. The chicken broth, garlic and crushed red pepper add some great flavor as well. This would also be tasty served over ravioli or tortellini if you don't want to use regular pasta.

You can add or substitute with these ingredients:
- use homemade alfredo sauce instead of store bought
- serve with grilled chicken breast on top
- use any pasta, ravioli or tortellini
- add pesto to the sauce instead of basil
Recipe tips:
- Refrigerate leftovers in an airtight container for up to three days.
Tomato Basil Mushroom Alfredo Sauce
Ingredients
- 1 - 16 ounce box of pasta, cooked according to package directions
- 1 1/2 tablespoons olive oil
- 1/2 cup chopped onion
- 1 - 8 ounce container sliced fresh white mushrooms
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon crushed red pepper
- 3 cloves garlic, minced
- 1 - 16.9 ounce jar alfredo sauce
- 2 cups halved grape tomatoes
- 1 cup chicken broth
- 1/4 cup chopped fresh basil
- parmesan cheese for topping
Instructions
- Heat a large skillet over medium heat. Add the olive oil, onion, mushrooms, salt, pepper and red pepper flakes. Cook, stirring often until onion and mushrooms are tender. Add the garlic, and cook for another minute.
- Add the alfredo sauce and tomatoes to the skillet. Pour the chicken broth into the alfredo jar, cover and shake. Pour broth mixture from the jar into the skillet and stir to combine.
- Once the sauce starts bubbling, reduce heat to medium low and simmer the sauce for about 10 minutes, or until the tomatoes are soft.
- Stir in the basil and remove from heat. Serve on top of the pasta and top with parmesan cheese.
