I just love a good homemade mac and cheese!
This is classic comfort soul food food, especially when it's served with some fried fish or chicken, greens and cornbread with a few dashes of hot sauce on top.
I have so many great memories eating meals like that, especially with one of my longtime friends, Shannon. She always made the best soul food meals and I learned so many cooking techniques from her throughout the years.
This mac and cheese is defintely my most favorite! It turns out so creamy and the flavor is absolutely delicious!!
I've tried other cheese combos, but I always seem to come back to this three cheese combo of swiss, sharp cheddar and Velveeta.
It's always a crowd pleaser and most everyone takes seconds. This pan makes a pretty large batch and can feed alot of people.

Instead of cheddar or swiss cheese, you can use pretty much any shredded cheese at the grocery store or in your fridge! I love using pepper jack or mozzarella.

Creamy Baked Macaroni and Cheese
Yield: 8 servings
ingredients:
- 2 cups uncooked elbow macaroni noodles
- 5 tablespoons butter
- 1/4 cup onion, finely diced
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup all purpose flour
- 3 cups milk
- 8 ounces Velveeta cheese, cut into small cubes
- 1 1/2 cups shredded sharp cheddar cheese, divided
- 1 cup shredded swiss cheese
instructions:
- Cook macaroni to al dente according to package directions. Drain and rinse.
- Grease a 9x13 glass baking dish. Preheat oven to 350 degrees.
- In a large pan, melt the butter over medium heat. Add onions, paprika, salt and pepper and saute for 5-7 minutes or until onion is tender.
- Add flour, stir until combined and cook for about 2-3 minutes. Add milk and heat until sauce begins to thicken, stirring often.
- Stir in the velveeta, 1 cup cheddar and swiss. Remove from heat once cheese is melted. Stir in the cooked macaroni until combined.
- Pour into the greased baking dish.
- Sprinkle remaining 1/2 cup cheddar evenly over the top. Bake for 30 minutes until bubbly and browned.
