If you're looking for a new and fun breakfast idea, try these Mini Strawberry Pancakes! These little pancakes are simple to make, using common fridge and pantry ingredients, like Bisquick! We love topping them with freshly whipped cream, sprinkles or syrup!
My girls LOVE pancakes and we make them often, so this recipe was a great addition to our regular rotation.
They're fast enough for a weekday breakfast, but special enough to add to your weekend breakfast. You can make ahead and reheat and they're also freezer friendly. Kids love them and they might just become a new family favorite!

Recipe tips and substitution ideas:
- Store the leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or air fryer.
- To freeze, place cooled pancakes in layers with parchment paper between in an airtight container. Freeze for up to one month. Reheat in the microwave.
- Try using any berry instead of strawberries (seeds may need to be strained before adding milk to the mix) or use bananas instead of strawberries.
- If you prefer to skip Bisquick and make pancakes homemade, use this basic pancake recipe, blend the strawberries with the milk, then add milk as instructed.

Mini Strawberry Pancakes
Ingredients
- 1 cup milk
- 3-4 large strawberries, stems removed
- 2 cups Bisquick
- 2 large eggs
- 2 teaspoons vanilla extract
- 1-2 drops red or pink food coloring, optional
Instructions
- In a blender, blend milk and strawberries until smooth. This will create about 2 cups of frothy strawberry milk.
- In a large bowl, whisk together Bisquick, eggs, vanilla and food coloring.
- Whisk in the strawberry milk.
- Heat a griddle or skillet to medium-medium high heat. Grease the skillet if needed, then pour 1 tablespoon of the batter to create mini pancakes.
- Cook for 1 minute on each side (depending on how hot your griddle is). These will cook a lot faster than typical pancakes because they are much smaller. So keep an eye on them.
- Remove from the griddle and let cool slightly before serving.
