PIN THIS RECIPE
I got a fantastic deal on some blueberries at Trader Joe's a couple weeks ago and needed to find a recipe to use them in.
I just love how cheap blueberries are this time of year. I've even had some the size of a quarter, and they were SO sweet and juicy. I could eat a whole package in one sitting, no lie!
After browsing through my cookbooks for awhile, I stumbled on this berry pie bar recipe and I knew it would be the perfect one to try! I just love how these bars turned out.
They have just enough sweetness and the filling goes great with the crust. These would be a great dessert for picnics or BBQ's in the summer, or for dinner and family gatherings during the winter. We even put them in my daughter's lunchbox for school.
You could also substitute any berry depending on what you have, or what's on sale, or if blueberries aren't your thing.
Pie is defintely my favorite dessert. I'm not much of a baker through, so these bars are a perfect substitute for people like me.

What is in blueberry pie bars?
- All purpose flour: It's a combination of hard and soft wheats. Bleached flour provides a softer texture. It's versatile and you can bake most anything with it!
- Granulated sugar: Also known as white sugar, table sugar or regular sugar. It's grainy, common and used in many types of recipes.
- Sour cream: This fermented cream is made from regular cream and becomes thick and sour from lactic acid bacteria. This can be used in sweet and savory recipes and if you're interested in making it homemade try this recipe! It's a great source of calcium.
- Fresh blueberries: Eating this fruit daily can improve heart health. They are low in calories, packed full of antioxidants and should be refrigerated after purchasing them.

What readers are saying about this recipe:
- Lea- Third time I've made these!!! My family loves them
- Carol- Good recipe but I did vary it because of diabetic family members, and frozen raspberries as well as blueberries. Added coconut as I'd been wanting something with it. Lined my pan with parchment paper. Lifted out well and cuts neatly. Quick and easy great Sunday night dessert.
- Susan- Very easy and delicious. I used the blueberries from my blueberry patch. I let them thaw a bit, but the bars turned out great!

DeleteWill frozen blueberries work in this recipe?
ReplyDeleteI'm not sure how frozen blueberries will work. I'm not much of a baker, but I think it might be too runny using frozen. If you try it, let me know how it turns out!
DeleteI used frozen blueberries in this recipe and the bars turned out great! I did bake them a bit longer though, about 65 minutes, but I also had the oven temperature at 325°F. These are delicious! And so much easier than making a pie!
DeleteThanks so much for letting me know how it turned out using frozen blueberries! I really love how easy this recipe is. I'm not much of a pie maker :)
DeleteSounds amazing Sheena, pinning :)
ReplyDeleteI made these earlier this week and loved them! That is really saying something too, because I don't like blueberries at all. I made them for a school event, and wasn't even going to try one bc I don't like blueberries, but they looked so good that I couldn't resist. I'm glad I didn't because I loved them! My husband and kids did too. Thanks for sharing.
ReplyDeleteI love blueberries. This looks so good. I will have to try it.
ReplyDeleteEnjoy!
DeleteCant wait for blueberries to go on sale so I can try these deluscious - looking bars...and yes, they look easier and neater than blueberry pie!
ReplyDeleteEnjoy! They are so much easier!
DeleteAwesome bars! I added the zest of a lemon to the filling and a few tablespoons of rolled oats to the topping. I love blueberries and lemon. Super easy recipe.
ReplyDeleteCan I use a 9x13 pan for these? I don't think I have an 11x7.
ReplyDeleteYes, you may have to adjust the baking time so they don't overcook. Enjoy!
DeleteIs there anyway to substitute the sour cream? Or should i leave it out? I LOVE these bars but i can't serve them to my daycare, one child has a milk allergy.
ReplyDeleteHi! I have not tried either so I'm not sure how the end result would be, but there is an almond milk sour cream available at most grocery stores or full-fat coconut milk can also make an excellent sour cream replacement in baked goods. Just add 1 tablespoon of lemon juice for every cup of coconut milk to mimic the sour taste. Hope that helps! Let me know if you try either! Thanks for stopping by!
DeleteYes, please! Love these!
ReplyDeleteHow about putting cream cheese bits into the mixture? Would that work?
ReplyDeleteThat sounds delicious and should work!
Deleteany substitution suggestions for the butter? Granddaughter cant have dairy. and - just to clarify - 3/4 c butter right?? using 1/2 cup sticks since it comes in so many variations now :)
ReplyDeleteI have not used any substitutions for butter and cannot comment on how it would turn out, but you could try coconut oil or vegan butter. You are correct, it would be 3/4 cup. Thanks!
DeleteCan you freeze these bars for a later date.
ReplyDeleteI have not tried freezing them, but you should be able to.
