Today's recipe is not only easy, but it's ready in less than 30 minutes, making it the perfect meal for those busy weeknights!
I was always a big fan of Rachael Ray's 30 Minute Meals when it first came on tv and I watched it faithfully. I loved her recipes, but felt that so many of them were out of reach for a family like mine. The ingredients seemed inaccessible in my area, and alot of them weren't very budget friendly.
When I started blogging, I vowed to offer recipes that had common ingredients and could be super affordable. This recipe is defintely one of those.

Fresh basil is a favorite at our house, as well as parmesan cheese and they both add SO much to this recipe.
I just love jasmine rice and the mushrooms go perfectly with the garlic and chicken. This recipe has a large punch of garlic flavor, which my family absolutely loves. If garlic isn't really your thing, try reducing the amount or skipping it all together.
This recipe is easy to double for a larger family, and is great served with a side salad, breadsticks or a simple vegetable. Leftovers are super tasty too for a work lunch or a quick individual meal for dinner.

What is in Garlic Chicken and Mushroom Parmesan Rice Skillet?
- Garlic: My love for garlic is real. I use it in almost everything I cook and I love the health benefits it offers. Garlic is part of the onion, leek and chive family. It's great for heart health and contains many vitamins and minerals.
- Chicken: I love using leftover chicken in pretty much everything, soups, casseroles, sandwiches and more! I buy chicken breast and cook it in the slow cooker to use for meals, or buy my rotisserie chickens at Sam's Club.
- Jasmine Rice: It has a sweet aroma when cooked and it is stickier than other varieties of long grain rice. It has a soft, moist texture and it sweeter than other rice varieties. It's primarily grown in Thailand.
- Fresh Basil: Also called sweet basil and is an annual herb in the mint family. It's a great source of vitamin k, vitamin a, magnesium and iron. It has a sweet smell with a peppery taste.

This recipe is ready in these steps:
- Melt the butter in a large skillet
- Add the chicken, season with salt and pepper and cook
- Add the garlic and mushrooms, saute
- Add the rice and broth, bring to a boil
- Reduce the heat, cover and simmer, stirring occasionally
- Add the parmesan and basil, cook until rice is tender and liquid is absorbed

Garlic Chicken and Mushroom Parmesan Rice Skillet
Yield: 4 servings
ingredients:
- 2 tablespoons butter
- 1 large chicken breast, cut into bite sized pieces
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 1 cup uncooked jasmine rice
- 2 1/2 cups chicken broth
- 1/2 cup shredded parmesan cheese
- 2 tablespoons fresh basil, chopped
instructions:
- Melt the butter in a large skillet over medium high heat.
- Add the chicken, season with salt and pepper and cook for 4-5 minutes.
- Add the garlic and mushrooms, saute for another 3-4 minutes.
- Add the rice and broth, bring to a boil.
- Reduce the heat to medium low, cover and simmer for 15 minutes, stirring occasionally.
- Add the parmesan and basil, cook for an additional 5 minutes or until rice is tender and liquid is absorbed.
