This recipe takes the classic three ingredient peanut butter cookies to the next level by adding cinnamon chips!
Cinnamon chips have been a favorite of mine for many years and I usually use them in cookies, banana bread or muffins. We were making a batch of peanut butter cookies recently and I thought to add some chips.
The cinnamon chips go so perfectly with the peanut butter and adds a great taste and texture to these cookies. We used crunchy peanut butter for this batch, but creamy peanut butter is always a winner too.
This recipe is so basic and easy, they really turn out perfectly every single time. Pack them in your work lunch box, have them for an after school snack or with your coffee or tea.

Peanut Butter and Cinnamon Chip Cookies
Ingredients
- 1 cup crunchy peanut butter
- 1 cup granulated sugar
- 1 large egg
- 1/3 cup cinnamon chips
Instructions
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- Mix together peanut butter, sugar and egg in a mixing bowl until well combined. Fold in the cinnamon chips.
- Form 12 balls with the dough and place on prepared baking sheet. Press the top of the balls down with a fork, making a criss cross pattern. Bake for 12 minutes, until lightly browned.
- Remove from baking sheet and cool on wire baking rack.
Notes
