I've been wanting to try stuffed peppers for the longest time, but never got around to it! I recently bought some yummy white capsicum peppers from the farmer's market down the street and knew I had to use them to make stuffed peppers!
The stuffing consists of a yummy mixture of ground beef, pasta, tomatoes, and some spices It packs so much flavor into each bite! My daughter isn't much of a pepper fan, so she just ate some of the filling, and it was right up her alley, since she is a huge pasta lover! I loved this recipe too. It's super satisfying and I love how easy they are to make. This is one recipe we will be making again and again!
Ground Beef Italian Style Stuffed Peppers (click here to print recipe)
What you need:
3 large bell peppers (I used the white capsicum pepper)
1/2 pound lean ground beef
2 cloves garlic, minced
1 small onion, finely diced
1- 14.5 ounce can diced tomatoes
2/3 cup water
3/4 cup orzo pasta
2 cups fresh spinach, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
salt and pepper, as desired
1/2 cup mozzarella, shredded
Directions:
Preheat oven to 350 degrees.
Cut the peppers in half lengthwise and remove seeds and ribs. In a dutch oven, cook peppers in boiling water for 3-5 minutes. Drain and rinse in cold water. Place cut side down and dry on paper towels.
In a large skillet, cook ground beef, garlic and onion over medium heat until beef is no longer pink. Add tomatoes, water, orzo, spinach, oregano, basil, salt and pepper. Bring to a boil, then reduce heat. Cover and simmer for 5-7 minutes, until orzo is cooked through, stirring often.
Spoon ground beef and orzo mixture into the peppers. Place peppers in a baking dish coated with cooking spray. Cover and bake for 25-30 minutes, or until peppers are tender.
Sprinkle with cheese and bake for another 5 minutes, uncovered until cheese is melted.
