I got started on some packing and spent some time with my bestie for her son's birthday. It was such a peaceful and relaxing weekend.
Today's recipe is for a delicious Ham, Mushroom & Swiss Breakfast Sandwich.
This sandwich would be a great breakfast, or weeknight dinner! Quick and easy. The mushrooms and swiss are a perfect and flavorful topping for the ham and egg.
I am quite obsessed with homemade mcmuffins and this was one of my favorite variations so far.
My other favorite can be found here. It's called "The Ultimate McMuffin" and has some turkey and avocado! Yum!

Ham, Mushroom and Swiss Breakfast Sandwich

Ham, Mushroom and Swiss Breakfast Sandwich
2 sandwiches
What you need:
2 tablespoons butter, divided
1 1/2 cups fresh white mushrooms, sliced
2 slices swiss cheese
2 large eggs
2 slices deli ham or Canadian bacon
2 English muffins, toasted
salt and pepper, as desired
Directions:
In a nonstick skillet, melt 1 1/2 tablespoons butter over medium heat.
What you need:

2 English muffins, toasted
salt and pepper, as desired
Directions:
In a nonstick skillet, melt 1 1/2 tablespoons butter over medium heat.
Add mushrooms, salt and pepper and saute for about 5 minutes, until tender.
Place the slice of cheese on top of the mushrooms, cover and cook for 1 more minute. Remove mushrooms from pan and set aside.
On one side of the skillet, melt remaining 1/2 tablespoon butter, and cook the eggs how you prefer, seasoning with salt and pepper. (I like mine over hard for sandwiches. Scrambled or over easy works great too.)
While the eggs are cooking, warm the ham or Canadian bacon on the other side of the skillet.
Place egg on the bottom of each toasted English muffin, topping with ham, then mushrooms and cheese. Top with remaining half of the English muffin.
