Hello! I hope you had a wonderful Thanksgiving! Are you a Black Friday shopper?? Me... not so much! I'm gonna sleep in tomorrow, enjoy the day off, go grocery shopping and packing! We close on the house in 3 weeks... eeekkk!!
Today I have a delicious Sausage and Veggie Egg Bake for you! This is a great weekend breakfast or weekday breakfast for dinner! It's easy to prep and bake and it's so fresh tasting! I hope you enjoy! :)
Sausage and Veggie Egg Bake (click here to print recipe)
What you need:
6 sausage links, cooked according to package directions and sliced
1/2 cup onion, diced
1/2 cup red bell pepper, diced
1 cup white mushrooms, sliced
3/4 cup fresh spinach, chopped
2 tablespoons fresh parsley, chopped
8 eggs
1/2 cup milk
1/2 teaspoon dried dill weed
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper
salt
3/4 cup shredded cheese, optional (I forgot to add it and it tastes great, but would be even better with cheese!)
Directions:
Preheat oven to 350 degrees.
Grease an 8x11 glass baking dish. Add sausage, onion, bell pepper, mushrooms, spinach and parsley to the baking dish. Slightly mix and spread evenly across the bottom. If you add the cheese, sprinkle over the ingredients already in the baking dish.
In a bowl, whisk together the eggs, milk, dill weed, chili powder, garlic powder, salt and pepper. Pour this mixture over the ingredients in the baking dish.
Bake for 30-35 minutes, or until eggs are set.

This looks good to me. Giving the same recipe to me without telling me what to cook, i am sure I will just pan fried this. Baking have never come across my mind. Should try this method. Thanks for sharing and from DBB. Pin in my Group's board.
