One word that describes today's recipe is heavenly. These Pecan Pie Cheesecake Bars are a crowd pleaser! Everyone raves about them and they're such a favorite for the holiday season.
Each layer has a different flavor and texture, making it such an incredible bite. I love making this recipe the night before serving. If it's a busy holiday, then I can use my time the day of, prepping and cooking other things.
This recipe is easy to make and sure to become a family favorite!

Recipe tips and substitution ideas:
- These bars need time to chill so they can set. Make sure to keep that in mind when planning your menu.
- Leftovers can be refrigerated in an airtight container for up to three days.
- If you want to go extra heavenly, serve with some ice cream or whipped cream on top!
- Try almond extract instead of vanilla, or another kind of nut instead of pecan.

Pecan Pie Cheesecake Bars
Ingredients
- Crust:
- 1/2 cup butter
- 2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- Cheesecake:
- 2 - 8 ounce packages of cream cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- Pecan Topping:
- 1 cup light brown sugar
- 1/2 cup light corn syrup
- 1/2 cup heavy cream
- 1/4 cup butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
Instructions
- Preheat your oven to 350 degrees F.
- Line a 9x13 inch baking dish with parchment paper, and spray with non-stick spray. Set aside.
- Melt the 1/2 cup butter by microwaving on 30 second increments in a microwave safe bowl.
- In a medium mixing bowl, combine the melted butter, graham cracker crumbs and sugar, mixing until well combined.
- Press the graham cracker mixture into the bottom of the prepared 9x13 inch baking dish.
- Bake for 10 minutes, then allow to cool.
- Meanwhile, in a large mixing bowl, beat the cream cheese and sugar with an electric mixer, until smooth.
- Add the vanilla extract and eggs, and mix until well combined.
- Pour the cheesecake mixture over the prepared crust, and smooth out evenly.
- Bake at 350 for 30 minutes, until just the very center is only slightly jiggly.
- Allow the cheesecake to cool slightly.
- For the topping, in a medium sauce pan, combine the brown sugar, corn syrup, heavy cream, butter, and salt.
- Heat over medium heat, until boiling, and boil for 2-3 minutes.
- Add the vanilla extract and pecans, and stir.
- Allow this mixture to cool slightly, and then drop by spoonfuls over the cheesecake. Smooth out evenly.
- Allow the entire cheesecake to cool completely, and then chill in the refrigerator for 4 hours, or over night.
- Cut and serve!
