This easy slow cooker soup is creamy and packed full of chicken and vegetables! It's simple to prep using fresh and frozen veggies, canned soup and chicken broth.
Kids absolutely love it and we usually serve it topped with a biscuit for chicken pot pie soup, with some crusty bread, a sandwich or salad. It's a great weeknight dinner or even lunch if you put it in the slow cooker right away in the morning.
Even though this soup isn't completely homemade, it's hearty and will warm you up on a cold fall or winter day. If you have the time, you can make your own cream soup and use that instead of the canned soup in this recipe.
No matter how you make it, it's affordable for a family and everyone enjoys eating it.

Slow Cooker Creamy Chicken and Vegetable Soup
Ingredients
- 1 cup russet potatoes, peeled and cubed
- 1 onion, finely diced
- 2 celery stalks, diced
- 2 carrots, peeled and diced
- 2 - 10.5 ounce cans cream of chicken soup
- 2 cloves garlic, minced
- ¼ teaspoon black pepper
- 4 cups chicken broth
- 3 cups diced cooked chicken
- 2 cups frozen mixed vegetables
- ¼ cup water, optional
- 3 tablespoons cornstarch, optional
Instructions
- Prepare a slow cooker with nonstick cooking spray.
- In the slow cooker, mix the potatoes, onion, celery, carrots, soup, garlic, salt, black pepper, chicken broth, and chicken.
- Cover the slow cooker and cook on low for 5 to 6 hours.
- Stir in the mixed vegetables and cook for an additional hour.
- If a thicker soup is desired, mix the water and cornstarch. Stir the cornstarch slurry into the soup and cook until thickened, about 30 minutes.
