These gorgeous crepes are perfect for breakfast or dessert! Each bite is amazingly delicious!
For those of you who have a special someone in their life, I have a perfect treat for you to make them on Valentine's Day!
Special someone can be your significant other, kiddos, friends, or even yourself. Oh yes, I'd totally make these for myself. Because, who really wants to share something this good anyway?
These crepes are heavenly. Straight from the Strawberries and Cream God.
I first introduced the cream used in this recipe back in 2013 and I've been in love with it ever since!
That first recipe was for a fun and patriotic Berries with Mascarpone Cream! I didn't stop there, next up was Cream Puffs!

Now back to these crepes! We decided to use fresh strawberries with the cream, but any berry would be just as fabulous.
My sister handled the crepe making for this recipe, which she is a pro, might I add! They cook up quick and within 20 minutes you have a tasty breakfast or dessert.
I love them more for breakfast, but they are good anytime! Enjoy!
Strawberries and Cream Crepes
What you need:
crepes:
4 eggs
1/2 cup butter, melted
1/3 cup sugar
1 cup milk
1/4 cup water
1 teaspoon vanilla
1 cup flour
dash salt
cream:
1- 8 ounce container mascarpone cheese
1 cup heavy whipping cream
1/2 cup powdered sugar
1/2 teaspoon vanilla extract
fresh strawberries, sliced
Directions:
crepes:
Place all crepe ingredients in a blender, except flour. Blend together. Add flour, then blend again until combined.
Lightly butter an eight inch non-stick skillet and heat on medium. Once skillet is heated, add 1/4 cup batter to the pan, and swirl until the bottom of the pan has a very thin layer of batter. Cook for about 30 seconds, until edges can be lifted with a spatula. Use fingers to flip crepe, and cook for an additional 10-15 seconds. Place cooked crepes on a plate with wax paper between to prevent sticking. Repeat until batter is gone.
cream:
Whip the mascarpone in a medium sized mixing bowl with an electric mixer. Add whipping cream, powdered sugar and vanilla. Whip until thickened. Refrigerate until serving.
Add cream and strawberries in a line down the center of the crepe. Roll and serve!
