A delicious pasta ready in less than 30 minutes!
I hope everyone had a wonderful weekend! It was pretty relaxing for us! Ella had a sleepover Friday night and a birthday party on Saturday, other than that we hung out at home and did some shopping. Totally the kind of weekends I love!
Today's recipe is perfect for busy weeknights! It's packed full of flavor and doesn't require alot of attention when cooking other than stirring occasionally! I'm a huge fan of one pot meals. They are a timesaver and end up being the perfect size meal for a family when served with a salad and some bread or another side.
This one is especially good. I really love the flavors from the garlic, fire roasted tomatoes and spinach! You really can't go wrong with any of those! My daughter's favorite is penne, so we used that. You can use any pasta you have on hand. Just adjust the cook time according to the package directions! Enjoy!

Chicken, Tomato and Spinach One Pot Pasta

Ingredients (4 servings)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 medium onion, diced
- 2 cups cooked chicken, cut into bite sized pieces
- 2 1/2 cups chicken broth
- 1- 14.5 ounce can fire roasted tomatoes with garlic
- 8 ounces penne pasta
- 1/2 cup half and half
- 4 cups baby spinach
- 2 tablespoons fresh basil, chopped
- parmesan cheese, for topping
- salt and pepper, as needed
Instructions
In a large skillet or saucepan, heat the olive oil over medium heat. Add the garlic and onion, and cook for 3-4 minutes. Then add chicken, broth, and diced tomatoes. Increase heat and bring to a boil. Add penne, reduce heat back to medium, cover and cook for approx 12 minutes, stirring often to prevent noodles from sticking.
Stir in the half and half, spinach and basil. Season with salt and pepper. Simmer for an additional 3 minutes until spinach is wilted. Remove from heat and let cool for a few minutes before serving. Top with parmesan cheese.

this looks like a fabulous pasta recipe! I love spinach in my pasta!
