Today's recipe screams summer! This fresh Mango Salsa is perfect with chips for an appetizer or snack. We also love it served with grilled chicken or fish, or with tacos, burritos or nachos.

It's light, fresh, sweet and savory. It tastes perfect when it's freshly made, but can also be made ahead and refrigerated before serving. I recommend eating it within a few hours for the best texture and taste.

You'll want to make sure your mangos are ripe, the salsa will end up more juicy and sweet than if they aren't. The red onion and cilantro add the savory element, and the lime juice and red pepper add to the sweetness.

This mango salsa is definitely at the top of my spring and summer favorites list. I sometimes make it and eat it for lunch with some tortilla chips. It's always a hit at parties and barbecues. You'll want to double or triple the batch for a bigger crowd, because it will disappear fast!

  • Sweet red peppers are smaller than bell peppers, about the size of a jalapeno.
  • Be sure to chop ingredients into bite sized pieces that make it easy for scooping.

Mango Salsa

Ingredients

  • 2 mangoes, diced
  • 3 sweet red peppers, diced
  • ½ medium red onion, diced
  • ¼ cup fresh chopped cilantro
  • 1 tablespoon freshly squeezed lime juice
  • 1 teaspoon coarse salt

Instructions

  1. Add all ingredients to a large bowl and gently stir until combined.

Notes

Refrigerate leftovers in an airtight container for up to two days.
