Today's sandwich recipe is a hit! I love a good, basic cold sandwich most any day of the week. But, sometimes, you want to make an extra special sandwich, and this Roast Beef Sandwich with Truffle Mayo, is just that.
The crustiness from the baguette is perfect for this sandwich. The roast beef and truffle pair so well together and the arugula adds that peppery, fresh flavor. The Parmesan needs no explanation. It's perfect on everything and the roasted pine nuts add a great crunch and texture.
This sandwich is great for a picnic, lunch at home or work. I like to eat it freshly made, but you could make ahead as well.

You can add or substitute with these ingredients:
- use turkey instead of roast beef
- add sliced red onion
- use spinach instead of arugula
- use sharp white cheddar instead of parmesan
- use a croissant instead of a baguette
- use swiss cheese instead of parmesan
- use garlic mayo instead of truffle
- use provolone cheese instead of parmesan
- add homemade sliced pickles or pickled red onion
Recipe tips:
- If making this sandwich ahead, assemble as directed. Wrap in parchment paper and refrigerate for up to 6 hours.
- If you don't have shaved parmesan, use a veggie peeler to shave the cheese from your block of parmesan. I recommend freshly shredded, grated or shaved cheese whenever possible for the best flavor and melt.
- Do not skip roasting the pine nuts! It adds such a great crunch and buttery flavor.
Roast Beef Sandwich with Truffle Mayo
Ingredients
- 2 tablespoons mayonnaise
- 1 tablespoon white truffle oil
- 1 ounce pine nuts
- 1 baguette
- 2 ounces arugula
- 4-6 slices of medium-rare roast beef
- 1 ounce shaved parmesan cheese
- salt, to taste
- freshly cracked black pepper, to taste
Instructions
- In a bowl, mix the mayonnaise and truffle oil until well combined.
- In a skillet, roast the pine nuts on medium-high heat for about 3-4 minutes, or until golden brown on the outside.
- Cut the baguette open and evenly spread the truffle mayonnaise on the baguette.
- Add the arugula over the baguette, then add the slices of roast beef.
- Add the shaved parmesan.
- Season with salt and pepper.
- Top off with roasted pine nuts.
- Cut in half and serve!

Caramelized onions make everything better! As does Heinz!! This sandwich looks yum. I have never made the onions on the grill before. Will definitely have to give it a go! Thanks!

I really love that new Heinz Mustard commercial too lol I thought of it when I was reading you post ;)
