Made with just five simple ingredients, self-rising flour, cream cheese, butter, buttermilk, and a pinch of salt, this budget friendly recipe is easy to make with ingredients you can actually pronounce. No special equipment needed, just good old fashioned homemade flavor!
These biscuits are a hit in our house! My girls go absolutely crazy for them! They’ve quickly become a family favorite and are perfect served with jelly for breakfast, as a base for a breakfast sandwich, or topped with gravy for a classic Southern style meal. Recipe tips and other helpful info:
- Refrigerate any leftovers in an airtight container for up to three days.
- Make sure to not twist the cutter when making biscuits. because it seals the edges, preventing them from rising properly and resulting in flatter, less flaky biscuits.
- Cast iron pans are great for baking biscuits because they retain and distribute heat evenly, creating perfectly golden, crispy bottoms while keeping the insides soft and fluffy.
- Don’t have self-rising flour on hand? No problem, you can make your own at home! Just mix 2 cups of all-purpose flour with 3 teaspoons of baking powder and 1/2 teaspoon of salt. Whisk everything together well to ensure it's evenly combined, and you’ve got a perfect substitute for store-bought self-rising flour.
- Cold butter is essential when making biscuits because it creates steam as it melts during baking, resulting in light, flaky layers and a tender texture.

Butter Bite Biscuits
Ingredients
- 2 cups self rising flour, plus extra for rolling
- ½ teaspoon salt
- ½ cup cold butter, cut into small cubes
- ¼ cup cream cheese, room temperature
- ¾ cup buttermilk
- 1 tablespoon melted butter
Instructions
- Preheat oven to 500 degrees F. Lightly spray a cast iron skillet or baking pan with non stick cooking spray. (pan should be small enough so that the biscuits will touch each other)
- In a large bowl, combine the flour and salt.
- Add in the cubed butter and cream cheese. Cut in with your hands or a pastry blender until you reach the consistency of cottage cheese.
- Make a well in the center of the mixture and pour the buttermilk into the well.
- Using your hands, mix the wet and dry until just combined. Form into a loose ball. Dough will appear a bit shaggy but that is what makes for a more flaky biscuit.
- Sprinkle flour on top of the dough. Flour a silpat or counter surface and plop the dough onto it. Re-flour the top as needed. Mixture may be a bit moist in the center.
- Roll to about a ¾ inch thickness, making sure to not work the dough too much. Too much working of the dough makes for a tough biscuit. using a 2-inch biscuit cutter or drinking glass, cut straight down into the dough. Do not twist the cutter.
- Continue cutting the biscuits, rerolling the leftover dough as needed to make more.
- Place biscuits into the prepared pan, sides touching each other.
- Brush tops with the melted butter.
- Place on center rack of the preheated oven and immediately turn the temperature down to 450°.
- Bake for approx. 18 min. or until lightly browned. Remove from oven and allow to cool in pan.
