A simple and delicious dinner or appetizer idea! Full of fresh flavors and completely satisfying!
It's all about fish and shrimp at our house! My daughter and I are both huge fans, and you can find a fish or shrimp dinner on our table at least once a week! I love to get creative and find fun and new ways to prepare it, so we don't get tired of the same old thing.
That's how today's recipe was born! I was strolling through the aisles at my local Walmart and stumbled across SeaPak® Shrimp in the freezer aisle! I've never been one to bread and cook shrimp myself, but instead buy it pre-breaded so it's a bit faster to prepare!
SeaPak offers a great variety of high quality shrimp products that you may not normally find in the frozen section! I purchased the Party Size Butterfly Shrimp, along with the Party Size Coconut Shrimp. Both of these would be delicious with today's recipe, but I opted to use the Butterfly Shrimp this time around.
This recipe seriously deserves an applause! I prepared the shrimp by baking them, but frying them would also be great. The toasted Hawaiian dinner rolls are the perfect slider bun, and the salsa? Oh my goodness. It's nearly perfection! All these flavors combined in a slider are just short of amazing! It reminds me of laying on the beach in the warm, tropical sun. They would be great for a weeknight dinner, but even better as an appetizer at your next party!
Your guests would be super impressed! Plus, if you make a larger batch of salsa, you can serve it as a separate appetizer with tortilla chips for those who don't eat meat, or just want some extra on the side. The sweetness of the pineapple pairs wonderfully with the savory flavors of the avocado, onion, pepper and cilantro!
The SeaPak Shrimp was absolutely perfect in this recipe. They fit on the slider bun nicely and added a nice crunch to every bite. I would love to try them in some shrimp po' boys, shrimp tacos or even a shrimp parmesan with pasta! It makes mealtime so much easier and that's especially handy when weeknights are filled with sports, piano lessons and other activities!

Shrimp Sliders with Pineapple Avocado Salsa

Ingredients (12 sliders)
- 24 SeaPak Butterfly Shrimp
- 12 Hawaiian dinner rolls, sliced in half
- 2 avocado, diced
- 1 cup fresh pineapple, diced
- 1/4 cup red onion, diced
- 2 tablespoons fresh cilantro, chopped
- 1 lime, juiced
- 1/2 cup Anaheim pepper, diced
- salt and pepper, to taste
Instructions
Prepare SeaPak Butterfly Shrimp according to package directions. Remove tails and discard.
Place Hawaiian dinner rolls on a cookie sheet, sliced side up. Broil until browned and toasty, watching to make sure they don't burn.
Meanwhile, combine avocado, pineapple, red onion, cilantro, lime and Anaheim pepper. Season with salt and pepper, to taste. Refrigerate until shrimp and dinner rolls are ready.
Place shrimp on the bottom of the dinner roll. Scoop salsa over top and cover with the top of the dinner roll. Serve immediately.
