We're expecting our first 90 degree day of the summer this weekend here in Minnesota! Since the weather will be feeling a little tropical, I figured what a better recipe to post than a fruity, savory salsa recipe!
I first made this recipe back in February with my Shrimp Sliders! It was a big hit then, so I decided to post just the salsa recipe for those of you who want to use it with tacos, chips or anything else!
I'm a huge fan of all things sweet and savory, and this recipe hits the spot for that! It's fast and easy to make and would also be delicious with jalapeno, black beans, or even corn added in. I love trying different flavors when making fresh salsa!
My nine year old, Ella is surprisingly a fan of fresh salsas. She loves fresh red onion and tomatoes, so when we make more of a traditional recipe like this one, she is all over it.
I love getting her involved in the prep by cutting veggies! She is a great little helper and is way more likely to try something when she has a hand in making it. Most of the time she is quite picky, so when she tries something new it's a victory!

Pineapple Avocado Salsa

Ingredients (4 servings)
- 2 ripe avocados, diced
- 1 cup fresh pineapple, diced
- 1/4 cup red onion, finely diced
- 2 tablespoons cilantro, chopped
- 1 lime, juiced
- 1/2 cup Anaheim pepper, diced
- salt and pepper, to taste
Instructions
Combine all ingredients in a bowl. Serve immediately.

Our temperatures have dropped a bit, but I would eat this salsa in any weather! So refreshing!
