Today's recipe is pretty fantastic. Easy, tasty and very inexpensive to make!
Tuna burger you ask?? Yes! Tuna makes some wonderful burgers!
I made an amazing Tuna Burger with Cilantro Garlic Aioli back in July of 2014 and it is and continues to be one of the most popular recipes here at Hot Eats and Cool Reads!
They're delicious, filling and the aioli is to die for!

I found myself with an abundance of leftover rice from the rice cooker, so I thought why not add it with tuna to make a burger! I also added some veggies and seasonings.
The end result was fantastic!
This burger is packed full of nutrients and it's ready in less than 15 minutes! You really can't get much better than that!
I also scored on all these ingredients recently at my local Aldi!
Hamburger and hot dog buns were only 29 cents a package. At that price, you really need to plan some meals with burgers, sloppy joes and hot dogs!
They are all family friendly and homemade! Great for weeknights and weekend lunches.

Tuna, Rice and Veggie Burger

Ingredients (3 burgers)
- 1- 6 ounce can tuna, drained and flaked
- 1/2 cup cooked white rice
- 1/4 cup carrot, finely shredded
- 4 green onions, finely sliced
- 1/4 cup Italian breadcrumbs
- 2 teaspoons dried parsley
- 1/2 teaspoon dill weed
- 1 tablespoon milk
- 1 egg
- salt and pepper
- hamburger buns
- cheese (I used jalapeno havarti)
- mayo
- olive oil
Instructions
In a bowl, combine tuna, rice, carrots, onion, breadcrumbs, parsley, dill weed, milk, egg, salt and pepper until mixed.
Shape into 3 patties, set aside.
Heat a non stick skillet over medium high heat and add olive oil. Place patties in skillet and cook on each side until browned, about 3-4 minutes.
Meanwhile, preheat oven broiler. Place buns on cookie sheet, and place cheese on inside top of each bun. Broil until buns are toasted and cheese is melted.
Spread mayo on inside bottom of each bun, place tuna patty on top and top with the cheesy top half of the bun.
Serve immediately.
