I'm back after a month away from the blog with a delicious and summery salad!
What have I been up to?
A trip to Salt Lake City for a Young Living convention, a long weekend in Mankato for the 4th and enjoying some much needed time outside having BBQ's and going to outdoor festivals with friends and family!
It was my first time visiting Salt Lake City and I had the best time ever! The mountain view was gorgeous and along with the Young Living convention, I also got to visit the Young Living farm in Mona, Utah!

It was such a beautiful experience and I can't wait to go back again someday!
After trying a Kale Caesar Salad at one of the restaurants we visited in downtown Salt Lake City, I knew I had to come home, re-create it and share with all of you!
This salad made at home was just as delicious, if not more delicious that the one I had on vacation!
I visited my local farmer's market yesterday and picked up some kale, and made homemade croutons with cranberry wild rice bread, and whipped up the salad for lunch today.
I seriously can't get enough of kale salads lately. The kale has such a wonderful texture compared to lettuce and so many nutrients!
I'm always looking for more, easy lunch options to avoid eating lunch at a restaurant. This is simple to prep ahead of time, and package a few in single serve containers to grab and go in the morning. I love using these reusable containers for my dressing!
Since kale is available at the farmers market right now, it's also very budget friendly! Bonus!
Some of my other favorite salad options for lunch are:
Watercress, Apple and Zucchini Orzo Salad, Barley and Zucchini Mason Jar Salad, Tomato and Cucumber Orzo Salad, Crunchy Poppyseed Chicken Salad, Crunchy Broccoli and Bacon Salad, or Balsamic Tomato, Cucumber and Strawberry Salad!

Loaded Kale Caesar Salad
by
Ingredients (1 single serving salad)
- 1 cup kale, chopped and packed
- 2 tablespoons caesar dressing
- 1 hard boiled egg, sliced
- 1 campari tomato, sliced
- 1 slice bacon, cooked and crumbled
- 1 tablespoon shredded parmesan cheese
- 1/3 cup croutons (I used these)
Instructions
Combine kale and dressing in a bowl. Let sit for 10-15 minutes while prepping remaining ingredients.
Add hard boiled egg, tomato, bacon and parmesan cheese to the kale and combine until coated.
Scoop onto a plate and top with croutons and serve.

I can tell from these pictures that you had a lot of fun in Salt Lake City! It sure does look like a beautiful city. After looking at these pictures, I think I'm going to be searching for recipes of Kale Caesar Salad, too!
