Hey lovelies! I’m back on the blog after a month away and I’m so excited to share a fresh, summery salad with you!
So, where have I been? I took an amazing trip to Salt Lake City for a Young Living convention, spent a long weekend in Mankato for the 4th of July, and soaked up plenty of sunshine at BBQs and outdoor festivals with friends and family. It was my first time in Salt Lake City, and it did not disappoint. The mountain views were breathtaking! I also had the chance to visit the Young Living farm in Mona, Utah, which was such a cool experience.
While dining downtown Salt Lake City, I tried a Kale Caesar Salad at a local restaurant and absolutely fell in love. I knew right then that I had to recreate it at home and share it with all of you! I stopped by my local farmer’s market yesterday, grabbed some fresh kale, made homemade croutons using cranberry wild rice bread, and whipped up this salad for lunch today and honestly, I think it’s even better than the one I had on vacation!
Lately, I’ve been obsessed with kale salads. Kale has such a great texture, holds up well in the fridge, and is packed with nutrients. This recipe makes a perfect make ahead lunch. I like to prep a few single serve containers for the week and use my favorite little reusable containers for the dressing. With kale in season and easy to find at the farmer’s market, this salad is also super budget-friendly. Win-win!

Recipe tips and substitution ideas:
- This salad is also great with grilled chicken, steak or shrimp! I recommend using freshly shredded parmesan cheese for the best flavor! Check out my favorite cheese shredder!
- It's important to allow the kale and dressing to sit before you serve. The dressing will help break down the toughness of the kale.
- If you're prepping this salad for future meals, use grape tomatoes and leave them whole, then add the croutons and dressing when serving.

Kale Caesar Salad
Ingredients
- 1 cup chopped kale, tightly packed
- 2 tablespoons caesar dressing
- 1 hard boiled egg, sliced
- 1 campari tomato, sliced
- 1 slice bacon, cooked and crumbled
- 1 tablespoon shredded parmesan cheese
- 1/3 cup croutons
Instructions
- Combine kale and dressing in a bowl. Let sit for 10-15 minutes while prepping remaining ingredients.
- Add hard boiled egg, tomato, bacon and parmesan cheese to the kale and gently toss until coated.
- Serve immediately topped with croutons.

I can tell from these pictures that you had a lot of fun in Salt Lake City! It sure does look like a beautiful city. After looking at these pictures, I think I'm going to be searching for recipes of Kale Caesar Salad, too!
