Happy Sunday everyone!

Most everyone in Minnesota is excited about the Vikings and Eagles championship game this evening and we have the TV ready for it to begin!

I'm not a football fan at all, but my boyfriend and daughter are, so I'll join them and maybe read a book, make some shepard's pie with my leftover mashed sweet potatoes and somewhat pay attention to the game!

It's crazy the Viking's haven't been in the Super Bowl since 1977, so I'm hoping along with almost every other Minnesotan, that they end up there in a couple weeks! The true Viking's fan could cook today's recipe in this fun Viking's slow cooker!

Today's recipe is great for Sunday dinner, or even an easy dinner during the week!

I love letting the slow cooker do all the work for me. If you pre-cook your mashed potatoes, pasta or rice ahead of time, it will take you less than five minutes to prep and dinner can be on the table!

Since we ate this on a Sunday, I roasted some vegetables to serve on the side, but it's also great served over the options above!

The beef is slightly creamy from the cream soup, and the roast gets it's delicious flavor from the onions, garlic and other seasonings added in.

The leftovers were delicious too and we enjoyed them for lunch at work that week. I love these Pyrex bowls for re-heating leftovers!

When I think of comfort food, this recipe is on top of my list!

Instructions:

  1. Trim the fat from the beef roast.
  2. Place beef roast in a slow cooker, then add the balsamic vinegar and cream of mushroom soup around the roast.
  3. Cover the roast with onions, garlic, parsley, paprika and black pepper.
  4. Cook on the low setting for 6-8 hours. Break the roast apart with two forks, then cook for another 20 minutes.
  5. Season with salt if desired and serve with veggies, rice or pasta.

  1. Looks yummy! I’m trying to make this now. What kind of roast are you using? I got a 2 1/2 lb chuck roast, but after trimming the fat I’ve only got about 1 1/2 lbs of meat. Which definitely won’t feed my family. ☹️

  2. Follow up: Luckily I had another, larger, roast in the freezer with not so much fat. I defrosted it and used that instead. This recipe is yummy! We all loved it. We’ve never had a creamy roast before and it was really good. Even the picky hubs thought so.
