I tend to use elbow macaroni a lot when it comes to pasta salads since it's SUPER cheap to buy in bulk at Sam's Club, but shell macaroni or any small pasta would work great!

Summer's been flying by for me and my family so far!

We've been to a ton of local festivals and concerts, ate SO much delicious food and have been doing so many BBQ's!

I brought this pasta salad to work with me a couple weeks ago for my co-workers to taste test.

They all loved it and confirmed that it's a great side for any summer meal.

I love raw zucchini and have such a huge abundance of it this time of year, but you can substitute cucumbers if raw zucchini isn't your thing.

You can use any type of leftover chicken breast in this recipe too! We love rotisserie chicken, but leftover grilled chicken would had such great flavor to this.

So easy to customize!

Chicken Pesto Pasta Salad

Yield: 6 servings

ingredients:

  • 2 1/2 cups cooked elbow macaroni
  • 1 cup cooked diced chicken
  • 1/4 cup sun dried tomatoes, chopped
  • 1/2 cup zucchini, diced
  • 1/4 cup red onion, diced
  • 1/4 cup mozzarella cheese, cubed
  • 2 strips bacon, cooked and chopped
  • 1/3 cup pesto
  • 2 tablespoons mayo
  • salt and pepper, to taste

instructions:

  1. In a large bowl, combine pasta, chicken, tomatoes, zucchini, red onion, mozzarella and bacon until combined.
  2. Whisk together the pesto, mayo, salt and pepper. Stir into pasta mixture until combined.
  3. Refrigerate until serving.
