Simple Homemade Vanilla Pudding
Making food from scratch has always been my thing.
As I grew older and had a child, it became even more important to cook from scratch. The flavor is so much better and it's still budget friendly.
My daughter picked out this recipe from a kids cooking cookbook and we got to work making it together!
Speaking of books, I've spent the past couple weeks getting my new bookshelves together!
My sister, Shannon picked them up at Ikea and assembled them for me. Since then, I've been busy putting them in alphabetical order and this is the end result!
I'm in love!
This is my motivation to start reading more again, so I can share more bookish posts with y'all!
After cooking and cooling the pudding, we were super excited to give it a try!
This pudding had almost a custard like flavor! So unique and so deliciously vanilla.
After this, I'm not sure if I'll ever buy store bought again.
This recipe doesn't take much longer than store bought other than the cooling process.
Trust me, it's worth the wait. Every single second. Ella agrees! This is defintely a new favorite of hers too!
Sprinkle with pretty sprinkles or whipped cream before serving!

Simple Homemade Vanilla Pudding
Yield: 4 servings
ingredients:
- 1/4 cup sugar
- 2 tablespoons cornstarch
- 1/8 teaspoon salt
- 2 cups milk
- 1 teaspoon vanilla extract
- sprinkles and whipped topping, optional
instructions:
- Combine the first 3 ingredients in a medium saucepan. Whisk in the milk.
- Bring to a boil over medium, whisking constantly. Cook for 1 minute or until pudding thickens, stirring constantly.
- Remove from heat and stir in the vanilla.
- Pour the pudding into a small bowl and cool to room temperature, stirring occasionally.
- Cover with plastic wrap and refrigerate for 3 or more hours. Serve with sprinkles and whipped cream.
