Madeleines. Such sweet, little bites of goodness.

My first experience with madeleines was not very glamourous. No amazing French bakery, just a package from the "bakery" at Target.

But, even though they were sub-par, I fell in love with the delicious flavor and texture.

Fast forward a couple years later. I find two madeleine pans in the kitchen section at Goodwill.

Fast forward another year. 2019. I finally used the pans which have been sitting in my cupboard for an entire year.

Result? These amazingly delicious Mini Chocolate Chip Madeleines.

Now why did I wait SO long to use them? No idea. They were super easy to make, and super addictive.

I forced myself to share them with a co-worker so my daughter and I wouldn't eat the entire half batch I just baked.

My co-worker ended up loving them too!

I love that I was able to make this recipe without having to make a special trip to the grocery store. Just basic and simple pantry and fridge ingredients is all I needed.

They bake up so quickly and in less than an hour you have enough madeleines for the whole neighborhood!

Madeleines first originated in France. They are very small butter sponge cakes shaped kind of like a shell.

The mini chocolate chips are a perfect addition, but you can also use finely chopped nuts, lemon or orange zest and use vanilla extract instead of almond.

I ended up eating some of mine at breakfast with coffee, but we ate them for a afternoon snack too, fresh out of the oven. I'm defintely making some for the next bake sale, or cookie exchange!

Don't make your Target your first madeleines experience. Run and buy some madeleine pans and make them yourself! You won't regret it. Promise!

Mini Chocolate Chip Madeleines

ingredients:

  1. Preheat the oven to 350 degrees. Grease two madeleine pans and set aside.
  2. In a large bowl, using electric mixer, beat together the butter and sugar, until light and fluffy. Add eggs one at a time, beating well after each one. 
  3. Then add the almond extract, beating until combined. Add flour, beating until just combined. Then add the chocolate chips, stirring to combine.
  4. Scoop dough by the tablespoon into greased pans. Bake for 10 minutes, until just barely firm to the touch. 
  5. Gently flip madeleines onto parchment paper, spread out and cool completely. Dust with powdered sugar.

NOTES:

This dough will keep in the refrigerator for up to one week. Cookies are best eaten the same day as made. Store in an airtight container.
