Spring is in full swing here in Minnesota! Temps for the most part have been in the 40's and 50's, and we've been outside grilling at least once a week when the sun is shining and the temps are warm.

With this pregnancy, I've been craving grilled food like crazy and am so thankful for my boyfriend who spends hours making the foods that cure my cravings!

We most recently had grilled steak and veggie kabobs, brats, burgers, pig wings and of course, asparagus.

Asparagus is one of my favorite spring foods along with rhubarb and I love trying out new recipes using it.

This recipe is full of garlic, cheesy goodness and the asparagus turns out tender and so flavorful!

The best thing about this recipe is you can make either in the oven or on the grill and it turns out perfect every time.

Use any cheese you have on hand or prefer, and mix up the seasonings for a new flavor each time you make it!

What is in Cheesy Garlic Asparagus?

Grill or Oven Foil Pack Cheesy Garlic Asparagus

Yield: 4 servings

Ingredients:

  • 1 pound of fresh asparagus, ends trimmed
  • 1 tablespoon melted butter
  • 2-3 cloves garlic, minced
  • 1/2 teaspoon dried parsley
  • 3/4 teaspoon lemon pepper seasoning
  • 1/4 teaspoon salt
  • 1 cup shredded swiss or mozzarella cheese

Instructions:

  1. Grill instructions:
  2. Preheat the grill to medium high.
  3. In a large bowl, combine asparagus, melted butter, garlic, parsley, lemon pepper and salt. Toss with tongs until combined. 
  4. Lay out a large piece of thick aluminum foil. Arrange asparagus on foil, pour extra butter and seasonings over top,  then top with cheese.
  5. Fold and seal foil pack.
  6. Grill for 15 minutes, until asparagus is tender. Remove and serve!
  7. Oven instructions:
  8. Preheat oven to 425 degrees, and place rack at the bottom of the oven.
  9. Prepare as directed above and bake in the oven for 15-17 minutes, until asparagus is tender.
