We can't get enough cookies around our house lately since we've been safe at home for the last 6 weeks!
Between my teen daughter requesting a batch at least once a week, to my pregnancy cravings kicking into full gear, we've been eating and trying tons of old and new recipes.
Today's cookie recipe is perfect! After trying the recipe a few different times, we've perfected it to exactly how we love our peanut butter cookies.
We go light on the chocolate chips, because we love just a taste and not tons of chocolate in each bite. This makes these cookies soft, chewy and a little nutty from the chunky peanut butter.
If you LOVE chocolate chips, feel free to double the amount, or even use the regular sized chocolate chips! If chunky peanut butter isn't your thing, you can use the smooth stuff as well.
This recipe is super to change up and customize and I guarantee the kids and the rest of the family will absolutely love them too!

What is in Best Peanut Butter Chocolate Chip Cookies?
- Vanilla extract: this extract is made from vanilla bean pods soaked in water and alcohol. Try using pure vanilla extract instead of imitation. This is the most common extract used in American desserts and I put it in pretty much anything sweet, Use store bought or make your own here!
- Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.
- All purpose flour: It's a combination of hard and soft wheats. Bleached flour provides a softer texture. It's versatile and you can bake most anything with it!
- Peanut Butter: Peanut butter is a paste or spread made from ground, dry roasted peanuts. It's relatively low carb food and contains good amounts of fats and protein, as well as some fiber. The two main kinds of peanut butter are crunchy or chunky and smooth or creamy. In crunchy peanut butter, some coarsely-ground peanut fragments are included to give extra texture. Buy store bought or make your own here!

This recipe is ready in these steps:
- Preheat the oven
- In a bowl, cream together the butter, sugar, brown sugar, and peanut butter
- Add the eggs and vanilla, mix
- In a bowl, mix the flour, salt and baking soda
- Gradually add the flour mixture to the wet ingredients and mix
- Stir in the chocolate chips
- Line baking sheets with parchment paper, then form the dough
- Place dough on baking sheet, and press slightly
- Bake
- Remove from oven and cool
- Store in an airtight container

The Best Peanut Butter Chocolate Chip Cookies
Yield: 4 dozen cookies
Ingredients:
- 3/4 cup butter, softened
- 1 cup granulated sugar
- 1 cup light brown sugar
- 1 cup chunky peanut butter
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 3/4 cup mini chocolate chips
Instructions:
- Preheat the oven to 350 degrees.
- In a bowl, cream together the butter, sugar, brown sugar, and peanut butter with a hand mixer until combined.
- Add the eggs and vanilla, mix until combined.
- In a small bowl, mix the flour, salt and baking soda.
- Gradually add the flour mixture to the wet ingredients and mix until combined.
- Stir in the chocolate chips with a spoon.
- Line baking sheets with parchment paper, then form the dough into 1" balls.
- Place dough on baking sheet, and press slightly with the palm of your hand.
- Bake for 12 minutes. Remove from oven and cool on wire racks.
- Store in an airtight container.
