I'm absolutely loving the cooler temperatures September has brought to central Minnesota! The windows are currently open, the cool breeze is flowing through the house and the sunshine is wonderful!
The last few weeks have been crazy and amazing at our house! We welcomed our sweet baby girl, Hazel into the world on August 12th! Mom, Dad and big sister, Ella are all adjusting well and enjoying every moment with Hazel!
A new baby in the house is leaving little time to cook, so today's recipe is perfect when you don't have alot of prep time and still want to get dinner on the table.
If you've been following for awhile, then you know mushrooms are a favorite at our house! We also LOVE baked rice recipes, so this side dish is the perfect combination of flavors and ingredients we enjoy.
This recipe is hearty, super flavorful and great with any mushroom you love or have on hand. The ingredients are simple, you can customize easily to switch up flavors or ingredients and it tastes wonderful with any protein you choose.
It's great as a side dish, or meatless main dish if you're vegetarian. Perfect to add into your regular recipe rotation!
What is in Baked Buttery Garlic Mushroom Rice?
- Portobello mushroom: These mushrooms are large in size and have a rounded, flat cap that is connected to a thick stem. When cooked, portobello mushrooms have a chewy and beefy meaty texture and a smoky, earthy flavor. When they are not fully grown, Portobellos are picked as a white round, button-shaped mushroom and referred to as Crimini, Bella or Baby Bella.
- Garlic: My love for garlic is real. I use it in almost everything I cook and I love the health benefits it offers. Garlic is part of the onion, leek and chive family. It's great for heart health and contains many vitamins and minerals.
- Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.
- Onion: The onion is a vegetable that is the most widely cultivated species of the genus Allium. It's relatives include the garlic, shallot, leek, and chive. Onions contain antioxidants, red onions have the highest antioxidant amount. Onions produce the chemical irritant known as syn-propanethial-S-oxide. This irritant floats up from the chopped onion and causes tears. Chill the onion prior to chopping to reduce irritation.

This recipe is ready in these steps:
- Preheat the oven
- In a bowl, toss mushrooms with butter and seasonings
- In a baking dish, place onion, broth and rice
- Combine well
- Spread mushrooms over rice
- Drizzle with olive oil
- Cover with aluminum foil
- Bake
- Remove and garnish
- Toss and serve hot

Buttery Garlic Mushroom Rice
Yield: 6 servings
Prep time: 5 MCook time: 50 MTotal time: 55 M
Ingredients:
- 2 cups fresh mushrooms, quartered
- 4 tablespoons butter, melted
- ½ teaspoon cayenne pepper
- 4 cloves garlic, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 small onion, diced
- 2 cups chicken or vegetable broth
- 1 cup white rice, uncooked
- ¾ tablespoon olive oil
- Garnish (optional)
- ¼ cup green onion, chopped
Instructions:
- Preheat the oven to 350 F / 180 C.
- In a large bowl toss mushrooms with melted butter, cayenne pepper, garlic, salt and pepper.
- In a 2 quart baking dish, place onion, vegetable broth and rice.
- Combine well so the rice is spread evenly in the baking dish.
- Spread mushrooms evenly over rice.
- Drizzle with olive oil. Cover with aluminum foil.
- Bake for 50 minutes. Remove and garnish with green onions.
- Toss and serve hot as a side dish.

Can you use brown rice in place of white.
ReplyDeleteYes, you can use brown rice. Follow the package directions for liquid and rice measurements and check baking time to make sure the rice is cooked through.
