This simple recipe uses refrigerated canned biscuits and ice cream along with butter and brown sugar for a tasty, sweet breakfast treat.
The ice cream shortcut adds flavor and sweetness to the simple caramel sauce, and you can use any of your favorite flavors of ice cream.
I used strawberry this time, but vanilla, chocolate, maple nut or pretty much any flavor would be so delicious.
This recipe is great for a quick weekday breakfast, brunch on the weekend or for a holiday celebration brunch.

What are some of the ingredients in this recipe?
- Brown sugar: Often produced by adding sugarcane molasses to refined white sugar crystals. There are two varieties, light brown sugar and dark brown sugar. Dark brown sugar has more molasses, which results in a darker color, richer flavor and more moisture. Try making your own brown sugar here!
- Butter: A dairy product consisting of approximately 80% butterfat and made from the fat and protein components of milk or cream. Most commonly made from cow's milk, but can also be made from sheep, goat, yak, or buffalo milk.

Easy Caramel Roll Biscuit Bites
Yield: 6 servings
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min
Ingredients
- 16.3 ounce tube 8 buttermilk biscuits
- 1/2 cup butter
- 1 cup any flavor ice cream (I used strawberry)
- 1/2 cup brown sugar
Instructions
- Preheat oven to 350 degrees. Grease a 9x9 inch baking dish.
- In a medium saucepan, melt butter and ice cream over medium heat. Add brown sugar and cook until sugar is dissolved and mixture is heated through.
- Pour mixture into the baking dish, then quarter the biscuits with a kitchen scissors and place evenly on top of caramel mixture.
- Bake for 25-30 minutes, until biscuits are browned and cooked through.
Notes:
I've tested the recipe using a deeper and more narrow baking dish and had to increase baking time to 30-35 minutes.
