Mushrooms... either you love them or hate them.
I absolutely LOVE them, but only fresh and never canned.
My cousin loved canned mushrooms growing up. She would literally walk around with the can and eat them just like that. I would never eat them and she always tried to convince me to try them with the promise that I'd develop super powers after. Well I did try one, hated it and never got my super powers.
I'm pretty sure my dislike came from the fact that they were canned, because I absolutely love any kind of fresh or dried mushroom.
Today's Cheesy Garlic Stuffed Mushrooms are a terrific party food, or if you're like me, you'd even eat them for a meatless lunch or dinner.
The three cheese combo, along with garlic and some other spices, make each bite so flavorful and creamy!
You can use almost any cheese you prefer, and switch it up between baby bellas and white mushrooms depending on your mood, a sale or whatever you have on hand.
I love that these can be made with basic, affordable ingredients and can be ready in about 30 minutes.
What are the ingredients in this recipe?
- Cream Cheese
- Parmesan cheese
- Garlic
- Baby Bella Mushrooms
- Fresh parsley
- Butter
- shredded cheddar cheese
- dried basil
- dried parsley flakes
- seasoned bread crumbs
- fresh parsley
Recipe tips:
- Wipe mushrooms with a damp paper towel instead of washing or soaking to prevent mushrooms from getting soggy.
- If you love mushrooms, keep the stems in a freezer bag with other vegetable scraps to make a delicious vegetable broth.
- These stuffed mushrooms can be made one day in advance. Prepare mushrooms as directed, saving the breadcrumb step for the day of, cover, and refrigerate. When ready to bake, complete the breadcrumb step, follow the cooking instructions, adding 5 minutes to the cook time.
- Reheat stuffed mushrooms in the oven on a baking sheet at 375 degrees F for 10-15 minutes, or until heated through.

Cheesy Garlic Stuffed Mushrooms
Ingredients
- 30 fresh mushrooms, stems removed
- 8 ounce package cream cheese, softened
- ¼ cup grated parmesan cheese
- 1 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 2 teaspoons dried basil
- 1 teaspoon dried parsley flakes
- ⅓ cup seasoned bread crumbs
- 2 tablespoons butter
- fresh parsley, chopped for garnish, if desired
Instructions
- Preheat oven to 375 degrees F
- Spray large baking sheet with cooking spray or line with parchment paper
- Clean mushrooms, removing stems and place on prepared baking sheet
- In a large bowl, cream together cream cheese, parmesan cheese, shredded cheese, garlic, basil and parsley until well combined
- Spoon mixture into each mushroom cap
- In a small microwave safe bowl, melt butter
- Stir in bread crumbs until completely combined
- Sprinkle each mushroom with bread crumb mixture
- Bake for 15-20 minutes or until cheese is melted and browned and the mushrooms are cooked through
- Garnish with fresh parsley if desired
