This herb bacon has just the right balance of sweetness and heat. You won't be able to stop at just one piece!
While the recipe does have some heat to it, it's definitely not overwhelming. I'm not a huge fan of spicy things and the amount was perfect for me. If you're worried that it might be spicy, you can reduce the amount of crushed red pepper, or omit it from the recipe completely. The flavor would still be amazing without it.
The brown sugar turns into a wonderful and flavorful glaze on top of the bacon after baking, and with the saltiness of the bacon, each bite is pretty much perfection.
This bacon would be wonderful for breakfast any day of the week, for brunch during the holidays, on a BLT or your favorite sandwich. It's amazing on a BLT with these Fried Green Tomatoes! We have made it multiple times and it's good any way you decide to serve it.

Recipe tips:
- You can skip the wire rack and bake directly on the parchment paper. Reduce baking time 5-10 minutes and place bacon on paper towels to remove excess grease before serving.

- Preheat the oven to 350 degrees F.
- Line two baking sheets with parchment paper, and place a wire rack on top of each baking sheet.
- Arrange bacon on each rack in a single layer.
- Evenly sprinkle brown sugar, red pepper flakes, rosemary and black pepper over bacon slices.
- Bake until the bacon is crisp and brown, rotating the baking sheets about halfway through, about 25-30 minutes.
