Currently there are over 500 variations of green beans in existence today.
But all can be categorized into one of two ways: bush or pole. These two categories refer to the way in which the beans were grown. Bush beans, which are normally a wider flatter bean, grow on a short, bushy plant. Pole beans, the longer, skinnier versions, grow as climbing vines that require a trellis or staking. String beans we're given their name specifically because of the tough fibrous string that went down the middle seam and had to be removed from each individual bean before being cooked. Thanks to plant breeders the new cultivars have been bred to reduce the string. So string beans are green beans. Just an outdated title.
While green beans are sure to make an appearance on the table this holiday season, unlike many of the tempting treats that make up holiday meals, green beans is one side dish that's not usually served with a side of guilt. Not only is it affordable, green beans are rich in vitamin C, fiber, and beta-carotene.

The combo of the butter, brown sugar and dijon make a great sauce that caramelizes and coats the green beans perfectly. I like the distinct flavor that comes from the white wine and vinegar ingredients that are specific to Dijon. And because Dijon can act as an emulsifier, it can be used to replace high fat ingredients like butter and heavy whipping cream.
These Brown Sugar Dijon Green Beans are so tasty. The sweetness from the brown sugar and the tanginess from the dijon is an absolute perfect flavor combo that works great for garden fresh green beans in the summer.
This side dish is easy, inexpensive, and perfect for any meal. It doesn't matter if it is meatless, vegetarian, or gluten free. With prep and cook time, this stovetop recipe is ready in about 25 minutes.

Sautéed Brown Sugar Dijon Green Beans
Ingredients
- 16 ounces fresh green beans, ends trimmed
- 1/3 cup water
- 1/2 tablespoon butter
- 1 1/2 tablespoons brown sugar
- 1 1/2 tablespoons dijon mustard
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Add the green beans and water to a large saute pan over medium high heat. Cook for 6-8 minutes.
- Reduce heat to medium, then add the butter and cook for another 3-4 minutes. Test the green beans. They should be crisp, but still tender enough to eat. If not, cook for another few minutes until they reach your desired doneness.
- Reduce heat to medium low, then add the brown sugar, dijon, salt and pepper.
- Mix to coat the beans, then cook for another 3-4 minutes until the sauce caramelizes.
- Remove from heat and serve.
Notes:
