Spicy Sriracha Noodles (Dragon Noodles)

These Sriracha Noodles are a perfect side or main dish. They have a little heat from the sriracha and crushed red pepper and the optional cilantro or green onion garnish adds a burst of freshness.

Today's recipe is simple and delicious! These Sriracha Noodles have been a favorite of our family for almost a year now.

My daughter brought a variation of this recipe home one day from her home ec class. Their group made them and loved them and we started making at home too. I changed a few of the original measurements to go with our family's taste.

We love serving this with Easy Baked Sweet and Sour Chicken or as a quick lunch or dinner by itself since it has the eggs for some protein. We sometimes add an extra egg or two as well. It's also very easy to cut the recipe in half or multiply for a larger family.

This dish really has the perfect combo of sweet, heat and salty.

Sriracha Noodles

Ingredients

  • 8 ounces angel hair pasta
  • 2 large eggs
  • 2 tablespoons brown sugar
  • 2 tablespoons reduced sodium soy sauce
  • 2 tablespoons sriracha sauce
  • 4 tablespoons butter
  • ¼ teaspoon crushed red pepper flakes
  • 1 green onion, thinly sliced for garnish
  • 1 tablespoon chopped cilantro, for garnish

Instructions

  1. Cook pasta in salted water to al dente according to package directions. Drain, rinse and set aside.
  2. Meanwhile in a bowl, whisk together the eggs. In a separate bowl, mix together the brown sugar, soy sauce and sriracha sauce. Set aside.
  3. In a large skillet, melt the butter over medium heat. Add the red pepper flakes once the butter has melted. Then add the eggs. Stir gently until eggs are scrambled and fully cooked.
  4. Add the cooked pasta, stir to combine, then add the sauce. Stir to combine again and heat through, about 3 minutes.
  5. Remove from heat and serve sprinkled with green onion and cilantro.

Notes

The garnish is completely optional but it adds some fresh flavor. It tastes great served with no garnish, or just use either green onion or cilantro instead of both.

If you prefer less heat, skip the red pepper flakes.

Store the leftovers in an airtight container in the refrigerator for up to three days.
